A new events space has come to central Sydney.
Saltbox is a purpose-built 560sqm venue from premium caterer Cook & Waiter. The latest addition to Sydney’s events scene had a soft opening in June 2025 and will open in full this autumn.
It’s located on Wunderlich Lane – a lifestyle precinct in Surry Hills recently developed by TOGA Group. Saltbox sits just east of the CBD and minutes from Central Station. The venue is surrounded by retail and hospitality outlets, as well as boutique accommodation.
Designed by SJB with interiors by Bates Smart, the carbon-neutral venue includes a pillarless main room for up to 460 guests, two breakout spaces and a 119sqm private terrace. Eco-friendly cork floors and cross-laminated timber are a key feature – the venue is presenting itself as a sustainable venue.

Saltbox enters a crowded Sydney market that includes ICC Sydney, Carriageworks, The Venue Alexandria and Doltone House. The venue occupies a specific position in the local sector – a new, modern and sustainable venue that focuses on corporate events, product launches and cocktail parties.
Cook & Waiter will operate the venue exclusively. The company is best known for its work on major brand activations and high-end private events.
Saltbox aims to appeal to organisers seeking more character than standard hotel conference space. Its opening is fairly timely, coinciding with rising demand for distinctive, experiential venues that are also accessible via transport. How successful will the venue be in seizing a share of the Sydney business events market?
